Panakarkandu Pongal is a sweet and flavorful dish made with rice, lentils, and palm sugar candy (Panakarkandu). It is a wholesome and healthier alternative to traditional sweeteners, perfect for festive occasions or as a nutritious dessert.

Ingredients

Main Ingredients

  • 1 cup raw rice
  • ½ cup yellow moong dal (yellow lentils)
  • 1½ cups Panakarkandu (Palm Sugar Candy), powdered
  • 4 cups water

For Flavoring and Garnishing

  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cardamom powder
  • 10-12 cashew nuts
  • 10-12 raisins
  • 1 tablespoon grated coconut (optional)
  • A pinch of edible camphor (optional)

Cooking Instructions

Step 1: Rinse and Cook Rice and Lentils

  1. Wash the rice and moong dal under running water until the water runs clear.
  2. In a pressure cooker, add the washed rice and lentils along with 4 cups of water.
  3. Pressure cook for 3-4 whistles or until soft and mushy. Let the pressure release naturally.

Step 2: Melt the Palm Sugar Candy

  1. While the rice and lentils are cooking, take 1½ cups of powdered Panakarkandu in a saucepan.
  2. Add ½ cup of water and heat on a low flame until it dissolves completely.
  3. Strain the syrup to remove any impurities and set aside.

Step 3: Prepare the Tempering

  1. Heat ghee in a pan over medium heat.
  2. Add cashew nuts and fry until golden brown.
  3. Add raisins and sauté until they puff up.
  4. If using, add grated coconut and sauté lightly.

Step 4: Combine and Simmer

  1. Open the pressure cooker and lightly mash the cooked rice and lentils.
  2. Pour the strained Panakarkandu syrup into the cooked mixture and mix well.
  3. Add cardamom powder and a pinch of edible camphor (if using).
  4. Simmer the mixture on low heat for 5-7 minutes, stirring continuously to avoid sticking.

Step 5: Garnish and Serve

  1. Add the prepared tempering of cashews, raisins, and coconut to the Pongal.
  2. Mix well and turn off the heat.

Serve the Panakarkandu Pongal warm, garnished with extra nuts if desired.
