Panakarkandu Pongal is a sweet and flavorful dish made with rice, lentils, and palm sugar candy (Panakarkandu). It is a wholesome and healthier alternative to traditional sweeteners, perfect for festive occasions or as a nutritious dessert.
Ingredients

- 1 cup raw rice
- ½ cup yellow moong dal (yellow lentils)
- 1½ cups Panakarkandu (Palm Sugar Candy), powdered
- 4 cups water
For Flavoring and Garnishing
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cardamom powder
- 10-12 cashew nuts
- 10-12 raisins
- 1 tablespoon grated coconut (optional)
- A pinch of edible camphor (optional)
Cooking Instructions
Step 1: Rinse and Cook Rice and Lentils
- Wash the rice and moong dal under running water until the water runs clear.
- In a pressure cooker, add the washed rice and lentils along with 4 cups of water.
- Pressure cook for 3-4 whistles or until soft and mushy. Let the pressure release naturally.
Step 2: Melt the Palm Sugar Candy
- While the rice and lentils are cooking, take 1½ cups of powdered Panakarkandu in a saucepan.
- Add ½ cup of water and heat on a low flame until it dissolves completely.
- Strain the syrup to remove any impurities and set aside.
Step 3: Prepare the Tempering
- Heat ghee in a pan over medium heat.
- Add cashew nuts and fry until golden brown.
- Add raisins and sauté until they puff up.
- If using, add grated coconut and sauté lightly.
Step 4: Combine and Simmer
- Open the pressure cooker and lightly mash the cooked rice and lentils.
- Pour the strained Panakarkandu syrup into the cooked mixture and mix well.
- Add cardamom powder and a pinch of edible camphor (if using).
- Simmer the mixture on low heat for 5-7 minutes, stirring continuously to avoid sticking.
Step 5: Garnish and Serve
- Add the prepared tempering of cashews, raisins, and coconut to the Pongal.
- Mix well and turn off the heat.
Serve the Panakarkandu Pongal warm, garnished with extra nuts if desired.
