Foxtail Millet Upma

Ingredients:

  • 1 cup foxtail millet
  • 1 onion, finely chopped
  • 1 green chili, slit
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 2 tablespoons ghee or oil
  • 10-12 curry leaves
  • Salt to taste
  • Water (2 cups)
  • Fresh coriander leaves for garnish

Instructions:

  1. Dry roast the foxtail millet in a pan for 2-3 minutes. Set aside.
  2. Heat ghee or oil in a pan, add mustard seeds, urad dal, and curry leaves. Sauté until the mustard seeds crackle.
  3. Add the chopped onions and green chili and sauté until the onions turn translucent.
  4. Add water and salt, and bring to a boil.
  5. Add the roasted millet, cover, and cook on low heat for 10-12 minutes.
  6. Garnish with fresh coriander leaves and serve.
