Foxtail Millet Upma
Ingredients:
- 1 cup foxtail millet
- 1 onion, finely chopped
- 1 green chili, slit
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 2 tablespoons ghee or oil
- 10-12 curry leaves
- Salt to taste
- Water (2 cups)
- Fresh coriander leaves for garnish
Instructions:
- Dry roast the foxtail millet in a pan for 2-3 minutes. Set aside.
- Heat ghee or oil in a pan, add mustard seeds, urad dal, and curry leaves. Sauté until the mustard seeds crackle.
- Add the chopped onions and green chili and sauté until the onions turn translucent.
- Add water and salt, and bring to a boil.
- Add the roasted millet, cover, and cook on low heat for 10-12 minutes.
- Garnish with fresh coriander leaves and serve.
