Ingredients:
- 1 cup Kodo Millet
- ½ cup split yellow moong dal (yellow lentils)
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 teaspoon black peppercorns
- 1 inch ginger, finely chopped
- 2-3 green chilies, finely chopped (adjust according to your spice preference)
- A pinch of asafoetida (hing)
- 10-12 curry leaves
- 2-3 tablespoons cashew nuts
- Salt to taste
- 4 cups water
- Fresh coriander leaves for garnishing.
Cooking Instructions:
-
Rinse the Kodo Millet and Lentils: Wash the kodo millet and moong dal under running water until the water runs clear. Soak them in water for about 20-30 minutes. Then, drain the water and set aside.
-
Pressure Cook Kodo Millet and Lentils: In a pressure cooker, add the soaked kodo millet and moong dal along with 4 cups of water. Close the lid and pressure cook for 3-4 whistles or until they are soft and well-cooked. Once done, let the pressure release naturally.
-
Tempering: Heat ghee in a pan over medium heat. Add cumin seeds and black peppercorns. Let them splutter. Then add chopped ginger, green chilies, asafoetida, curry leaves, and cashew nuts. Sauté until the cashews turn golden brown.
-
Combine Tempering with Cooked Millet and Lentils: Open the pressure cooker once the pressure has released. Mash the cooked millet and lentils lightly with the back of a spoon. Then, pour the prepared tempering over the mashed millet and lentils. Add salt to taste and mix everything well.
-
Simmer: Place the pressure cooker back on low heat and simmer the pongal for 5-7 minutes. This helps to blend the flavors together.
-
Garnish: Once done, turn off the heat. Garnish the Kodo Millet Pongal with freshly chopped coriander leaves.
-
Serve: Serve the Kodo Millet Pongal hot with coconut chutney or sambar.
Enjoy your nutritious and delicious Kodo Millet Pongal!
